We had a snacky-type of lunch today. Now that the weather is getting nicer and we're spending even more time outside, we often come home right around lunch time, starving. It has to go quick, and a lunch that can be put together in a hurry is just right :)
Small mozzarella balls, organic cherry tomatoes, seeweed (from trader joes),
beet salad, organic multigrain crackers, and organic hummus.
Can't wait to see what others had for lunch today :)
yum! We've been doing lots of beets too - I harvested my entire crop last week. I already replanted in hopes of a second harvest.

ReplyDeleteMy son LOVES seaweed. This was the first thing he ate! It makes for a great snack :) When we picked it up at the store, he couldn't wait for me to open it after we payed. I am quite shocked by how much he likes it. Maybe it's the saltiness (although, he doesn't like pretzels). My daughter is not a fan, but she adores hummus and will eat an entire container with a spoon ;)
